The marinade used for this recipe is great on venison, chicken, pork, and steak. This is an easy grilling option for nights when you don’t want to dirty the kitchen. In our first pass at these delectable little bites, we wrapped them in a tortilla with Pickled Chilis and romaine lettuce. For our second pass, we used the lettuce as the wrap and skipped the tortilla. Either way, they were delicious. You will want to mix up some Spiedie Marinade immediately and get it on some steaks. You’ll be ready to grill in 2-24 hours.
What is a spiedie?
Spiedie-style Venison Wraps

Yield: 1 pound of meat makes 4-6 wraps
Ingredients
- 1 recipe Spiedie Marinade
- 1-2 pounds venison steak, cut into 1-1½ inch chunks
- Your favorite bread or wrap (Italian bread is traditional)
- Your favorite toppings (suggested: roasted peppers and onions, shredded lettuce)
Directions
Blend or thoroughly whisk together all marinade ingredients. Pour over meat, cover, and marinate for 2 to 24 hours. Take the marinated meat out of the fridge about 1 hour before you want to start grilling; this will help it cook faster and more evenly.
Stake your meat and prep the grill for high heat. Grill for about 10 minutes, turning to sear all sides. Let stand for about 10 minutes after cooking so juices can redistribute.
Push the meat off the stakes directly into your bread of choice, top with your favorite toppings, and enjoy.
